The problem I have is that I have the IUS feat and my second unarmed strike isn't taking IUS into account, or the increase in damage from Monk levels for the second unarmed strike. The Thief Rogue is a viable option for the extra bonus action from Fast Hands for extra unarmed attacks. The player's handbook says that an unarmed strike deals damage equal to one+your strength modifier, but monk says you can alternate between using that or your strength modifier.
